I decided to make myself a sweet treat to celebrate. I like to bake, but it can be so time consuming. I wanted something quick and simple.
I love trail mix. I made a big batch a couple weeks ago. I still had a small amount of each ingredient left, so I figured why not melt some chocolate, mix in the ingredients, and make trail mix clusters!
I melted one bag of semi-sweet chocolate chips until smooth. If you use the microwave, melt for 30 seconds initially, stir, and then melt for 15 seconds. Stir. Repeat until all of the morsels have melted. This prevents the chocolate from burning.
I mixed in salted peanuts, sunflower seeds, and dried cranberries (what I had on hand). You could use anything you like. Almonds, cashews, raisins, dried cherries, and candy would all be delicious. The sky’s the limit.
You know what would also be great? White chocolate chips instead of the semi-sweet chocolate chips. Or butterscotch chips. Or peanut butter chips. Or a mix of two or more of the above. Hmmm, may have to try that…
Once you add your mix-ins, spoon individual clusters on to a foil lined baking sheet. Freeze for about an hour or until firm.
